My name is George Jolley and I live in Northern Virginia. For several years I have wanted to get into the bar-b-que and catering business. Within a month I plan to purchase a large smoker on a trailer. I have limited experience in this area but I love to cook on grills. I would appreciate any advice. I plan to start this business in about 3 months. What should I do now?

First step is to click into the Barbecue Store at www.barbecuen.com and pick up a copy of "The Great American Barbecue & Grilling Manual" which can teach you how to barbecue, how to choose a grill design (or build one) how to select, prep and care for meats. Next, go to your library and check out a few books on starting your own restaurant or catering business. Meanwhile, check with the local health authorities on regulations. Then write up a business plan with emphasis on market analysis and keep honing your cooking and planning skills.
Some people make lots of money catering barbecue, but preparation is essential to success.
