SIR, I WORK FOR A SHERIFF DEPARTMENT IN KANAWHA COUNTY, WEST VIRGINIA. I HAVE EATEN DEER MEAT MOST OF MY LIFE, HOWEVER I JUST PURCHASED A CROCK-POT. MY CHIEF ASKED ME IF I WOULD CONSIDER MAKING SOME BARBECUE FOR AN IN-HOUSE LUNCH. I WOULD LIKE TO KNOW IF I COULD USE DEER ROAST AND HOW TO PREPARE IT FOR THE CROCK POT. ALSO IF YOU HAVE ANY GREAT TASTING BARBECUE RECIPES I COULD USE WITH IT. MY CHIEF IS VERY PARTICULAR AND I CERTAINLY WOULD LIKE TO PLEASE HIM. THANKS.

If you want to make pot roast out of venison, that's the way to do it, but to call it barbecue would be a criminal offense.
Brown the roast in bacon grease, put in the crock pot with a large onion, sliced, 2 cloves of garlic, 2 carrots, 2 stalks celery, two bay leaves, 1/2 t. thyme, salt and fresh black pepper with 1 can of Campbell's beef broth and one can of water. Add more water if necessary to cover.
