Sure, you can leave the instant read thermometer in the meat all the time if you want to cook it down to a blob. Years ago one of my neighbors borrowed one of my thermometers to cook for a big party. She stuck it in a roast and stuck the roast in the oven. I still have it to show people what happens when you do that.
If you will learn a little more about cooking, you'll only have to use the thermometer twice. Once before you put the meat on the grill, to make certain that the meat is at room temp. Second time just to confirm that the interior of the meat is where you expect it to be.
