That makes two of us who don't know anything about deep pitt' barbecue. I think somebody has been blowing you some deep smoke.
If you have a hole in the ground deeper than 18 inches, you need to fill it with something. That is too deep and you have to keep shoveling out the ashes.
If you have an above the ground pit, masonry or otherwise, you have a jewel. Load it up with hardwood and burn it down to coals. Spread them out and lay on the meat. Keep the temp at the meat around 215 degrees, baste and turn as needed using any of the recipes on the recipe pages.
